Watermelon Agua Fresca

Remember that gigantic, 25 lb watermelon I mentioned? Well, I’m still working on it! So here is my newest creation. It is simple and refreshing, and it will almost make you forget that summer is quickly fading into fall.

Watermelon Agua Fresca (adapted from Eating Well)

Makes approximately 8 cups

  • 8 cups watermelon, seeded and cubed
  • 3 cups water
  • 1/4 cup lime juice
  • 2 tablespoons sugar*
  • Lime slices for garnish

* My watermelon was very sweet, so I didn’t add much sugar (and I probably didn’t need to add any at all). Adjust sugar depending on the sweetness of your watermelon.

Combine half each of the watermelon, water, lime juice and sugar in a blender. Blend until smooth. Pour through a fine mesh strainer, and discard the watermelon pulp. Repeat with the remaining half of the ingredients. Combine both batches of the agua fresca in a pitcher, and refrigerate until well chilled. Stir,  serve over ice, and garnish with lime.
